This cake is very similar in proportion to my favorite Chocolate Stout Cake, made with 50-50 melted butter and oil, which always falls slightly in the center but is luscious and pudding-y. I thought, minus the cardamom, this cake might be perfect for our grandchildren. The emulsion mixing and the two extra yolks created enough structure that the cake did not fall; however, the firm structure undermined the moistness, and in turn, the chocolate flavor. ( I would not call it dry--after exactly 45 minutes--but not pudding-y). However, we sprinkled cake slices with the cardamom I left out to try the flavor combo and I can hardly wait to bake this again with the cardamom and the glaze. I will grind the cardamom fresh because the choco-cardomom-coffee flavor was amazing!
