Q.How do you convert recipes for convection?

A.It depends on what you are cooking. When roasting, I reduce the cooking time by approximately 25 percent and cook at the same temperature. When baking, I reduce the temperature by 25° and check for doneness a few minutes before the suggested time. Convection ovens have a conversion feature that lets you punch in the temp and time for the original recipe, and the temp and time are automatically converted to convection mode.
