An enameled cast-iron Dutch oven (or “cocotte” to use Staub’s term) is an absolute essential for any serious cook. These large, heavy-lidded pots are perfect for braising and roasting, whether in or on top of the oven. The enamel finish makes it nonreactive and less likely to stick to foods. Staub’s uniquely designed lid fits snugly and retains more moisture than other models. The wide side handles are easy to grip with oven mitts. Though Staub sells cocottes in many sizes, if you have to choose just one the 5.5-quart is the most versatile for home cooks.
