An Easy, Weeknight St. Patrick’s Day Dinner

If you’re doing St. Patrick’s Day at home this year, this menu makes it hands-off and no-fuss for a weeknight. For starters is acool, crisp saladwith just about every shade of green. Thesteak and Guinness pieis made in the slow cooker, so it can braise away unattended all day (or if you have a little less time, in 4-5 hours). And for a quick, easy dessert, try this riff on an Irish coffee–anIrish coffee slushieif you will (just be sure to freeze the oatmilk and coffee in advance).

Menu Timeline

One day ahead

  • Freeze the oatmilk and coffee for the Frozen Irish Coffee.
  • Put the puff pastry in the fridge to thaw.

Six hours ahead

  • Start the Steak and Guinness Pie in the slow cooker.

One hour ahead

  • Add the potatoes to the slow cooker.

30 minutes ahead

  • Bake the puff pastry for the Steak and Guinness Pie.
  • Make the salad.

After dinner

  • Puree the ingredients for the Frozen Irish Coffee and serve immediately.
