This menu departs from some of the usual Hanukkah standards like brisket and latkes, and instead takes inspiration from the Mediterranean cuisines that rely on olive oil just as much as the holiday itself. And if you don’t love frying, this is the menu for you: the only thing actually fried are thealmonds in the salad(you could even substitute store-bought Marconas). Instead, it explores all the other ways to cook with olive oil: the main course ishalibut poached in the oil; crispysmashed roasted potatoesstand in for the usual latkes, and dessert is anItalian polenta-grape cakethat’s resplendent with olive oil instead of butter.
