Passion fruit juice is sour, much like a lemon. Its floral flavor makes it a great addition to cocktails. Add rum and a few ice cubes for a stronger drink, or skip the rum if you’d like a lighter beverage.
In a Champagne flute, combine passion fruit puree, simple syrup, and rum, if using. Stir to combine. Top with the sparkling wine.
