We steeped these aromatic Chinese green tea “anemones” in wineglasses so we could watch them transform to resemble their marine namesakes. We loved the dramatic display and the assertive, earthy flavor of the rosettes, which are simply tea leaves tied into bundles. The tea didn’t become overpowering as the leaves steeped, so if you like, you can keep an anemone in your glass or cup while you sip.
