It’s cold outside, and windy, and I wish I could curl up on the couch with a mug of something hot and… agrilled cheese sandwich. Don’t you? To me, grilled cheese is the most perfect sandwich in existence, and I thought I knew the secrets to making them well, but… Caroline atDevil and Egghas a grilled cheese tip that blew me away: for frying the sandwich, use mayo on the outside of the bread instead of butter. She says that the mayo “sort of caramelizes, forming a savory crust.” I bet the flavor of the cheese (in my house, it’s always sharp cheddar) would come through more, too, without having to fight against the butter for star billing. I can’t wait to try it!

Mayo all the way. Been using it instead of butter for years. Now my secret is out!
I never even thought about using mayo instead of butter until last year when I watched my friend do it. The smell it made when he cooked it turned me off automatically, but I'd be willing to try it in my own kitchen.
