Retro favorites get a renovation in this fresh island-inspired grilling menu

This menu serves 6 but you'll need to double the rice and scale up the cocktail recipes. The shopping list reflects the scaled-up amounts.

Think of this menu as a more doable luau. In place of the whole, spit-roasted pig, you’ve got succulent grilled pork chops in a ginger-sesame marinade, served with sweet grilled pineapple and scallions and rich coconut rice. Greet your guests with a new generation of tiki drink and a fresh twist on that pu-pu platter standby of teriyaki wings; here the chicken wings are doused in a homemade hoisin sesame sauce and grilled. Finish with an island classic, passionfruit ice cream studded with crunchy macadamias.

Menu Timeline

Up to One Day(at least 8 hours) Ahead:

  • Make the Passionfruit-Macadamia Ice Cream.

1-1/2 Hours Ahead:

  • Prep the chicken wings and coat with sauce.
  • Make the coconut rice and keep warm.

1 Hour Ahead:

  • Heat the grill.
  • Make the marinade and marinate the pork chops, pineapple, and scallions.

As Guests Arrive:

  • Make and serve the Lift-Off! cocktails.
  • Grill and serve the Sesame Chicken wings.
