Think of this menu as a more doable luau. In place of the whole, spit-roasted pig, you’ve got succulent grilled pork chops in a ginger-sesame marinade, served with sweet grilled pineapple and scallions and rich coconut rice. Greet your guests with a new generation of tiki drink and a fresh twist on that pu-pu platter standby of teriyaki wings; here the chicken wings are doused in a homemade hoisin sesame sauce and grilled. Finish with an island classic, passionfruit ice cream studded with crunchy macadamias.
