OMG this is SO good!! Not a true souffle, more like a combo souffle and pudding, as described. Minor changes - "dusted" buttered ramekins with Parmesan to give the souffle something to "climb" - it didn't, and probably not necessary, but it might have added a little flavor. I find chives to be wimpy, so I used 1/2 chives and half young scallion greens. Reduced recipe to make 4, but used the full amount of chives/scallions. Awesome side dish!
