Soy-Vinegar Dipping Sauce

Yield:Yields 1 cup

This savory sauce is delicious withLumpia(Filipino spring rolls), but also goes well with everything from grilled fish, chicken, and beef to vegetables and noodles. Make it just before serving so the chiles don’t overwhelm the other flavors.

Ingredients

  • 1/2 cup soy sauce, preferably Kikkoman brand
  • 1/2 cup rice vinegar, preferably Marukan brand
  • 2 Tbs. thinly sliced scallions, green parts only
  • 2 to 3 red or green Thai chiles, thinly sliced
