Our recipe forSalmon, Lentil, and Rice KedgereeinFine Cooking#111 calls for rinsing the rice before cooking. This step removes some of the starch from the surface of the rice grains so they remain separate when cooked, rather than sticking together in clumps. This technique is helpful for all types of white rice, unless the rice is vitamin-enriched (rinsing will remove the vitamins). For best results, rinse the rice in several changes of cold water, swishing it around with your hand, until the water is no longer very cloudy.
