While the world would not end if you didn’t bother skinning the nuts, there are a few good reasons why you should: The skins can be bitter, they can make a dish look dark, and they can get stuck in your teeth. Fortunately, the skins-or most of them, anyway-are easy to remove once the nuts are toasted. Simply wrap the hot nuts in a clean kitchen towel and let them sit for about 5 minutes; the resulting steam helps loosen the skins. Then vigorously rub the nuts against themselves in the towel. Be persistent and try to get at least half of the skins off.
