rapeseed oil

What is it?

Processed from the rapeseed plant (a seed plant related to mustard) this light, mild-tasting oil has gained popularity because it’s rated second only to olive oil in the amount of monounsaturated fat. Good for salad dressings and mayonnaise as well as for cooking.

Don’t have it?

Substitute any mild-flavored vegetable oil, such as grapeseed or corn oil.

How to prep:

Taste before using to be sure it has not gone rancid.

How to store:

Keep tightly sealed and away from heat.
