What is it?
Not to be confused with oyster mushrooms, king oysters are thick-stemmed mushrooms with smallish caps (scientific namePleurotus eryngii). It grows throughout Europe, Central Asia, and India. Though with many mushrooms, the stem is discarded, with king oyster’s stem has a prized dense, meaty texture and rich umami flavor. The mushroom stands up well to the high heat of roasting and grilling.
Where to find it
King oyster mushrooms are sold fresh in many Asian markets.
