Translated from Arabic, ras el hanout means “head of the shop.” This pungent North African spice blend was created by Moroccan spice dealers and typically features the finest things on offer in the shop on any given day. It can be used to flavor rubs, marinades, dips, and stews, and is most commonly composed of cumin, cardamom, coriander seed, clove, cinnamon, nutmeg, allspice, mace, ginger, cayenne, peppercorns, turmeric, and anise.
