Ginger-Citrus Marinade

Yield:Yields 1-1/4 cups, enough for 1 lb. meat or fish.

Ingredients

  • 2 scallions, thinly sliced
  • 1/4 cup fresh orange juice
  • 1 small lemon, thinly sliced
  • 2 Tbs. honey
  • 2-inch piece ginger, peeled and thinly sliced
  • Grated zest of 1 lime
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/3 cup canola or other vegetable oil

Preparation

  • Whisk together all ingredients in a small bowl. Combine the marinade and meat in a zip-top bag and refrigerate, turning occasionally. As a general rule, marinate shrimp, scallops, and fish for 30 to 40 minutes, chicken, beef, pork and lamb for at least 1 hour and up to 12 hours or overnight.

    Good flavor without a lot of fuss....used a pork tenderloin and grilled it with several veggies....family liked it. BTW....I also added soy sauce.
