What is it?
中国人或日本人醋制成的米酒。Rice vinegar generally has a mild, sweet taste because it contains about 4 to 5% acidity, compared to 5 to 7% for most other vinegars. While white rice vinegar is the most commonly-called-for variety, there are also red and black rice vinegars used in Chinese cuisine, and seasoned rice vinegar (seasoned with sugar and salt) used in Japanese cuisine, most notably for seasoning sushi rice.
