I made a double recipe of this. Absolutely delicious. I gave it an extra 15 minutes in the oven because we like our carrots more soft than al dente. Extra time required is likely due to the fact that I made a double recipe.
I made it in a 12" straight-sided sauté pan (roughly double the area of a 9" pan). I did have to use 4x the butter specified for this 2x recipe. By the time I had sauteed the shallots, there was no butter left in the pan for the carrots, so I had to double up. For the tomatoes I used a 28oz can of fire-roasted tomatoes with all the juice.
But, again, absolutely delicious and will definitely make again and again. Thank you!
