Quick Homemade Condensed Milk

Yield:about 2 cups

Making this pantry staple at home (just 4 ingredients!) is totally worth it; the smooth, rich texture is unlike anything you’ll get from a can. Use it in baked goods liketres leches cakeor thesemilky swirl brownies, or to transform coffee into an indulgent treat.

Ingredients

  • 4 cups (32 oz.) whole milk
  • 3/4 cup (6 oz.) heavy cream
  • 1 cup (7 oz.) granulated sugar
  • 1/8 tsp. kosher salt

Preparation

  • Combine the milk, cream, sugar, and salt in a 5-quart stainless-steel saucepan. (If using a digital scale, weigh the pot and ingredients individually so that you can track the reduction.) Place over medium heat, stirring occasionally with a heat-resistant spatula, until the milk begins to simmer, about 12 minutes. Continue cooking, scraping continuously to prevent a milky buildup from forming around the sides of the pan, 30 to 45 minutes. When the thickened milk begins to foam, it’s almost done. Keep simmering and stirring until the foam subsides and the milk has condensed to exactly 2 cups or 19 oz.
  • Pour into an airtight container, seal to prevent evaporation, and refrigerate up to one month. Bring to room temperature before using.

      Followed this recipe exactly to make Alton Brown's Tres Leches Cake for a Tepeyac Fiesta - everyone raved about the cake and said they could tell that it was all from scratch. My friend from Mexico said it was every bit as good as her own.
      This recipe yielded three small Ball mason jars of which I used two in the cake and saved one.
      I will be using the extra jar of condensed milk tomorrow in a batch of Milky Swirl Brownies for a Soup Kitchen.
