Basic Roasted Green Beans

You can jazz up this basic recipe by addingRosemary-Lemon Thyme OilorMoroccan Spice Rubwhen you toss the green beans with olive oil and salt and pepper before roasting. Or toss the green beans withSesame Sea Salt,Caramelized Shallot Butter,Ginger-Lemon Soy Splash, orToasted Coriander & Garlic Oilafter they come out of the oven.

Ingredients

  • 1 lb. green beans, stem ends trimmed
  • 1 to 3 Tbs. extra-virgin olive oil
  • 1/2 tsp. kosher salt; more to taste
  • Freshly ground black pepper
  • Fresh lemon juice (optional)

Preparation

  • Position a rack in the center of the oven and heat the oven to 475° F. Line a heavy-duty rimmed baking sheet with parchment. In a medium bowl, toss the green beans with enough of the olive oil to coat generously, the salt, and a few grinds of pepper.
  • Turn the beans out onto the baking sheet and arrange them so that they are evenly spaced. If the beans cover the baking sheet sparsely, arrange them toward the edges of the baking sheet for the best browning. Roast the beans until they’re tender, a bit shriveled, and slightly browned, about 15 minutes.
  • Return the green beans to the bowl in which you tossed them with the oil, or put them in a clean serving bowl. If they seem a bit dry, drizzle them with a little oil. Season to taste with salt, pepper, and lemon juice or another flavoring, if using.

    Simple and so delicious. This is my regular green bean recipe. Good with any of the condiment....or nothing but salt and pepper.

    These were excellent. Did not try the compound butter yet. Beans took only 8-10 minutes in my oven.

    Very easy recipe to prepare while meat rests. Prepared with caramelized shallot butter which enhanced flavour.

    Easy to make, very tasty. A hint, watch them closely because at 475 it doesn't take long for them to cook too long
