Fried Shallots

Yield:about 1 cup

Canned fried onions are a great topping for salads, main dishes, and sides. They’re a quick purchase at the grocery store, but it’s easy to make your own version at home. Added bonus: They don’t come from a can.

Ingredients

  • 3 medium shallots
  • 3 Tbs. cornstarch
  • 1 cup neutral oil, such as grapeseed or canola
  • Kosher salt

Preparation

Thinly slice the shallots lengthwise into thin strips, and then separate them into pieces. In a medium bowl, toss the shallots with the cornstarch until well coated. In a medium saucepan, heat the oil over medium heat. Add the shallots, and cook, tossing occasionally, until golden, about 2 minutes. Using a slotted spoon, transfer the shallots to a plate lined with paper towels. Salt lightly while still warm, and then use as directed.
