Garlic Fries

I have to confess, french fries are one of my favorite foods. I can’t resist them, whether they are from a fast-food drive-through or a fine restaurant. Luckily, these garlic-laced “fries” satisfy my cravings in a more healthful way. They come out golden brown, tender on the inside and crisp ouside. A final toss with chopped parsley gives them that real French bistro feel.

Ingredients

  • 3 cloves garlic, minced (about 1 Tbs.)
  • 2 Tbs. canola oil
  • 3 large baking potatoes
  • 1/2茶匙。盐,加米ore to taste
  • Cooking spray
  • 1 Tbs. finely chopped fresh flat-leaf parsley

Preparation

  • Preheat the oven to 450°F
  • Heat the garlic and oil together in a small saucepan over medium heat for 2 minutes. Strain the garlic from the oil with a small mesh strainer. Set both garlic and oil aside.
  • Cut the potatoes into 1/4-inch-thick matchsticks. In a large bowl, toss together the oil, potatoes, and salt. Coat a baking sheet with cooking spray and spread the potatoes on it in a single layer. Bake until golden and crisp, about 35 minutes.
  • Remove the potatoes from the baking sheet with a metal spatula. In a serving bowl, toss them with the parsley, reserved garlic, and salt to taste. Serve immediately.

    I had the opposite cooking experience. I cooked the fries for 20 minutes, thinking they would be close to done and they were still almost raw. I ended up moving them to my air fryer and finishing them there for another 15 minutes. They tasted good but not overly amazing and definately not worth the effort.

    Delicious! I took in to account the other review about cook time. I also used my oven at 425' and they cooked for about 30 minutes and were perfect. Recommend.

    This could be an excellent and easy recipe. A strong word of warning: 35 minutes at 450 will leave you with ashes. Instinct told me that 35 minutes was too long. I set the timer for 30 minutes. I started to get that funny feeling 20 minutes into the cooking process so I checked them. Half of them needed to be thrown away, the other half were like the crunchy shoestring potatoes you buy in the can. My suggestion? Follow the recipe ingredients and procedures but Bake in a 425 oven and check after 15 minutes. I based this on 1/4" matchsticks, per recipe. Thicker fries will obviously require more time.
