Gremolata Popcorn

A blend of fresh lemon zest, garlic, and parsley, gremolata is the classic topping for osso buco, but it also makes a fantastic popcorn topping. Garlic powder stands in for fresh here because it disperses more evenly.

Ingredients

  • 1 Tbs. finely grated lemon zest
  • Kosher salt
  • 1-1/2 oz. (3 Tbs.) unsalted butter, melted
  • 1 batch freshly poppedBasic Stovetop Popcorn
  • 1 Tbs. garlic powder
  • 1/3 cup finely chopped fresh flat-leaf parsley

Preparation

  • In a small bowl, combine the lemon zest and 1-1/2 tsp. salt.
  • Pour the melted butter over the popcorn and toss to coat well. Sprinkle the lemon-salt mixture, garlic powder, and parsley over the popcorn and toss well. Season to taste with additional salt.

    This is delicious popcorn. Some garlic powders are very salty so check the salt level. I usually mix the lemon zest with only 3/4 tsp of kosher salt.
