What is it?
When fresh tomatoes are out of season, diced canned tomatoes make an excellent and convenient substitute in stews, braises, and even salsas. “Petite” diced tomatoes (shown at right above) are a great choice when regular canned diced tomatoes are too large.
Keep in mind that most canned diced tomatoes are packed with calcium chloride, which helps the tomatoes maintain their shape as they cook. That makes them a good choice for dishes like chili or stews where you want intact “chunks” in the finished dish. But if you’re looking for tomatoes that break down during cooking, say, for a pasta sauce, you’re better off starting with whole tomatoes (or, for speed, strained or crushed tomatoes).

How to store:
Store unopened cans at room temperature in the pantry; refrigerate opened cans and use within a few days.
