This bright, crisp, and refreshing salad pairs well withstir-friesor with seared steak or salmon.

Ingredients

  • 1/4 cup rice vinegar
  • 2 Tbs. seeded and minced Fresno chile
  • 4 tsp. granulated sugar
  • 4 medium cucumbers, trimmed and peeled

Preparation

  • In a medium bowl, combine the vinegar, chile, and sugar. With a vegetable peeler, shave the cucumbers into the bowl in long, wide strips. Toss and let sit briefly before serving.

    What? No salt or any other seasonings? This recipe is severely lacking in this regard, and does not come up to reasonably expected standards. Hopefully, the magazine will work to get back to its roots.
