What is it?

Though it lacks the Italian pedigree of traditonal balsamic, white balsamic makes a nice, sweeter alternative to white wine of Champagne vinegar. Fruity and floral, it has the sweet-and-sour balance of regular balsamic without the dark color or caramel undertones.

White wine vinegar; Champagne vinegar; balsamic vinegar (where color won’t matter).

How to choose:

There is is single way to make white balsamic so your best bet is to taste different brands to see which you prefer. Alessi, Stonehouse, and Colavita are all delightful.

How to store:

Keep balsamic vinegar capped or corked and away from light and heat.
