Halaby pepper; Halab Pepper; Near Eastern pepper

What is it?

This dark red, flaky ground pepper from Northern Syria near the town of Aleppo, has deep fruity flavors that aren’t overwhelmed by its moderate heat. It‘s crushed from Halaby peppers (also called Halab or Near Eastern peppers), which have been naturally sun-dried for weeks and seeded.

These “Maras” peppers come from the same plant and are grown in the same type of soil with the same amount of rain, which is why the name remains the same even as the origin has changed.

Aleppo pepper is moderately hot and has a rich flavor that’s similar to that of ancho chiles but with more heat and hints of cumin. It’s great for seasoning anything from grilled meats to pizza to potatoes.

Don’t have it?

Substitute hot paprika (use less), cayenne (use less), or crushed red pepper flakes.

How to store:

Store in as you would other spices in a dark, dry space away from heat.
